  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil
  • 2 eggs eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix mashed bananas, honey, olive oil, and eggs until well combined.
  3. In another bowl, whisk together gluten-free flour and baking soda.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
