Ingredients

  • 1 1/2 cups gluten-free flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet ingredients
  • 3 ripe bananas mashed bananas
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil
  • 2 eggs large eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash bananas and mix in honey, olive oil, and eggs.
  3. Stir in gluten-free flour, baking soda, and salt until just combined.
  4. Pour batter into the prepared loaf pan and smooth the top.
  5. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before slicing and serving.

Notes

Use ripe bananas for best flavor and sweetness.
