Method
- Preheat oven to 400°F (200°C).
- Divide tomatoes, bell pepper, onion, garlic, and feta into ramekins or combine in a baking dish. Drizzle with olive oil.
- Mix spices and sprinkle over feta and veggies. Bake for 25 minutes.
- Stir in spinach, create wells, crack eggs into each, and bake for 10 more minutes.
- Top with herbs or chives. Serve with bread or pita.
