Ingredients
  

Vegetables and Cheese
  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper red bell pepper, diced
  • 0.5 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
Optional toppings
  • chopped fresh basil or fresh chives for topping

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Divide tomatoes, bell pepper, onion, garlic, and feta into ramekins or combine in a baking dish. Drizzle with olive oil.
  3. Mix spices and sprinkle over feta and veggies. Bake for 25 minutes.
  4. Stir in spinach, create wells, crack eggs into each, and bake for 10 more minutes.
  5. Top with herbs or chives. Serve with bread or pita.

Notes

Use fresh herbs for best flavor and serve immediately.
