Ingredients
  

Dry ingredients
  • 2 cups rolled oats
  • 1/4 cup vanilla protein powder
Wet ingredients
  • 4 large eggs
  • 1/4 cup raw honey or pure maple syrup
  • 2 cups unsweetened almond or coconut milk
  • 1 tsp vanilla extract
  • 1 tsp fresh lemon zest
Add-ins
  • 1/4 cup chopped nuts of choice such as almonds
  • 1 large banana, sliced
  • 1 cup mixed fresh or frozen berries
For greasing
  • coconut oil for greasing pan

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13 baking dish with coconut oil.
  2. Whisk eggs, protein powder, honey, vanilla, lemon zest, and milk until frothy.
  3. Add oats and stir until combined; let sit for 30 minutes if possible.
  4. Fold in nuts, banana slices, and berries; transfer to baking dish.
  5. Bake for 30-35 minutes until golden and set; cool slightly and cut into 6 squares.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week. Reheat as needed.
