Method
- Preheat oven to 375°F (190°C) and prepare muffin pan.
- Mash bananas in a large bowl, then add egg, melted butter, and vanilla. Mix well.
- In a separate bowl, whisk together flour, sugar, baking soda, and salt. Combine with wet ingredients, then fold in chocolate chips and walnuts if using.
- Divide batter evenly into muffin cups, filling about 2/3 full.
- Bake for 15-21 minutes until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to wire rack.
Notes
Use ripe bananas for best flavor and sweetness.
