Ingredients
  

Bananas
  • 4 medium overripe bananas (with brown spots)
Dry Ingredients
  • 1 cup plain flour (all-purpose)
  • 3/4 cup light brown sugar (packed)
  • 1/3 cup melted butter (cooled slightly)
  • 1 large egg (whisked)
  • 1/2 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
Optional Add-ins
  • 1/2 cup chocolate chips optional
  • 1/2 cup crushed walnuts optional

Method
 

  1. Preheat oven to 375°F (190°C) and prepare muffin pan.
  2. Mash bananas in a large bowl, then add egg, melted butter, and vanilla. Mix well.
  3. In a separate bowl, whisk together flour, sugar, baking soda, and salt. Combine with wet ingredients, then fold in chocolate chips and walnuts if using.
  4. Divide batter evenly into muffin cups, filling about 2/3 full.
  5. Bake for 15-21 minutes until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to wire rack.

Notes

Use ripe bananas for best flavor and sweetness.
