Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch salt
  • 1.5 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan.
  2. Mix mashed bananas with melted butter, sugar, egg, and vanilla.
  3. Stir in baking soda, salt, flour, cinnamon, and nutmeg; fold in nuts if using.
  4. Divide batter among muffin cups and bake for 18–22 minutes.
  5. Cool muffins in pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add a dash of cinnamon or nuts.
