Method
- Preheat oven to 350°F (175°C). Line a 12-cup muffin pan.
- Mix mashed bananas with melted butter, sugar, egg, and vanilla.
- Stir in baking soda, salt, flour, cinnamon, and nutmeg; fold in nuts if using.
- Divide batter among muffin cups and bake for 18–22 minutes.
- Cool muffins in pan for 5 minutes, then transfer to a wire rack.
Notes
For extra flavor, add a dash of cinnamon or nuts.
