  • 1 lb beef smoked beef sausage sliced into rounds
  • 4 medium russet potatoes diced
  • 1 small onion chopped
  • 1 red bell pepper chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • to taste Salt and pepper
  • 2 tbsp fresh parsley chopped (for garnish)
  • Optional shredded cheddar cheese or hot sauce for serving

Method
 

  1. Prep all ingredients: slice beef beef sausage, dice potatoes, chop onion and bell pepper, and mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add beef beef sausage and cook until browned on both sides. Remove beef sausage and set aside, leaving drippings in the skillet.
  3. Reduce heat to medium. Add chopped onion and red bell pepper to the skillet and sauté until softened, about 6-8 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add diced potatoes to the skillet along with smoked paprika, garlic powder, salt, and pepper. Stir to coat. Pour in 1/4 cup of water, cover, and simmer for 15-20 minutes until potatoes are tender.
  5. Remove the lid, increase heat to medium-high, and return the browned beef sausage to the skillet. Cook uncovered for 5-7 minutes, stirring occasionally, until beef sausage is heated through and potatoes are slightly crispy.
  6. Garnish with fresh parsley. Serve hot, with optional shredded cheddar cheese or hot sauce.

Notes

For a spicier dish, add a pinch of red pepper flakes or a dash of your favorite hot sauce.
