Method
- Prep all ingredients: slice beef beef sausage, dice potatoes, chop onion and bell pepper, and mince garlic.
- Heat olive oil in a large skillet over medium-high heat. Add beef beef sausage and cook until browned on both sides. Remove beef sausage and set aside, leaving drippings in the skillet.
- Reduce heat to medium. Add chopped onion and red bell pepper to the skillet and sauté until softened, about 6-8 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Add diced potatoes to the skillet along with smoked paprika, garlic powder, salt, and pepper. Stir to coat. Pour in 1/4 cup of water, cover, and simmer for 15-20 minutes until potatoes are tender.
- Remove the lid, increase heat to medium-high, and return the browned beef sausage to the skillet. Cook uncovered for 5-7 minutes, stirring occasionally, until beef sausage is heated through and potatoes are slightly crispy.
- Garnish with fresh parsley. Serve hot, with optional shredded cheddar cheese or hot sauce.
Notes
For a spicier dish, add a pinch of red pepper flakes or a dash of your favorite hot sauce.
