Ingredients
  

Protein
  • 4 lbs chicken parts (bone-in, skin-on thighs and breasts) about 4 cups cooked
  • 2 tbsp olive oil
Fruits & Nuts
  • 1 cup grapes (seedless, halved) red and green varieties
  • 1 cup almonds (thinly sliced)
Vegetables
  • 2 stalks celery (finely diced)
  • 3 scallions scallions (thinly sliced) white and green parts
Herbs & Condiments
  • 2 tbsp dill (fresh, chopped)
  • 1 tbsp parsley (fresh, chopped)
Dressing
  • 1 cup mayonnaise
  • 1 unit juice of 1 lemon
  • 1 tbsp Dijon mustard
  • 1 tsp Kosher salt start with 1/2 tsp, add more to taste
Seasoning
  • to taste freshly ground pepper

Method
 

  1. Preheat oven and season chicken.
  2. Roast chicken until cooked through, then cool and shred.
  3. Mix salad ingredients and prepare dressing.
  4. Combine dressing with salad, chill, and serve.
