Ingredients
  

Green Beans
  • 2 pounds fresh green beans, trimmed and cut in half
  • 0.5 tablespoon olive oil
  • 1 medium onion, chopped
  • 8 ounce mushrooms, chopped
  • 4 cloves garlic, minced
  • 2 cans condensed cream of mushroom soup (10.5 ounce)
  • 1 cup buttermilk
  • 1 cup chicken broth
  • 1 cup shredded Monterey Jack or mozzarella cheese preferably freshly shredded
  • 3 cups French’s crispy fried onions, divided

Method
 

  1. Preheat oven to 350F/180C. Grease a 9x13 pan.
  2. Boil green beans for 2-3 minutes, then drain.
  3. Sauté onions and mushrooms in oil for 3-5 minutes, add garlic and cook 1-2 minutes.
  4. Add soup, buttermilk, and broth; cook 5-8 minutes until heated.
  5. Mix in green beans, cheese, and ¾ cup fried onions. Transfer to pan.
  6. Bake uncovered 30-35 minutes, then top with remaining fried onions and bake 10 more minutes.

Notes

For extra flavor, add a sprinkle of fresh parsley before serving.
