Best Linzer Cookies Recipe

Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup raspberry or apricot jam
  • powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream softened butter and sugar until light and fluffy.
  3. Add vanilla, almond flour, all-purpose flour, salt, and cinnamon; mix until just combined. Chill dough 30 minutes.
  4. Roll out dough to 1/4 inch thick, cut out shapes, and make centers in half of the cookies.
  5. Bake 10-12 minutes until lightly golden. Cool, spread jam on solid cookies, top with cut-outs, and dust with powdered sugar.

Notes

Chill the dough for easier rolling and cutting.
