Ingredients
  

Dry Pasta
  • 12 ounces bow tie pasta
Vegetables and Cheese
  • 2 cups cherry tomatoes halved
  • 0.25 cup red onion diced
  • 1 cup bocconcini cheese halved
  • 1 cup spinach finely chopped
  • 0.5 cup basil finely chopped
Dressings
  • 3 tablespoons pesto
  • 2 tablespoons olive oil
  • 0.5 lemon lemon juice juiced
Seasonings
  • Salt Salt
  • Black pepper Black pepper

Method
 

  1. Cook the pasta in salted boiling water until al dente, then drain and cool.
  2. Mix pesto, olive oil, and lemon juice to make the dressing.
  3. Combine cooled pasta with tomatoes, onion, cheese, spinach, and basil in a large bowl.
  4. Add dressing, season with salt and pepper, and toss gently to coat.
  5. Serve immediately or refrigerate for up to 5 days.

Notes

For extra flavor, add a sprinkle of grated Parmesan before serving.
