Method
- Cook the pasta in salted boiling water until al dente, then drain and cool.
- Mix pesto, olive oil, and lemon juice to make the dressing.
- Combine cooled pasta with tomatoes, onion, cheese, spinach, and basil in a large bowl.
- Add dressing, season with salt and pepper, and toss gently to coat.
- Serve immediately or refrigerate for up to 5 days.
Notes
For extra flavor, add a sprinkle of grated Parmesan before serving.
