Ingredients
  

Dry ingredients
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened cocoa powder
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar, for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet.
  2. Mix dry ingredients in a bowl; set aside.
  3. Cream butter and sugar until fluffy, then add molasses, egg, vanilla.
  4. Gradually add dry ingredients; chill dough 30 mins.
  5. Form dough into balls, roll in powdered sugar, place on sheet.
  6. Bake 10-12 mins; cool before serving.

Notes

Chill dough for easier handling and better flavor.
