Dough
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg egg
  • 1/4 cup crushed candy canes
  • extra granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Mix softened butter and sugar until fluffy.
  2. Add egg, vanilla, and peppermint extracts; mix well. Stir in dry ingredients and crushed candy canes.
  3. Shape dough into balls, roll in sugar, and place on baking sheet.
  4. Bake for 10-12 minutes until edges are golden. Cool before serving.

Notes

For best results, do not overbake to keep cookies soft and chewy.
