Caprese Chicken Skillet

Ingredients
  

Balsamic Vinegar
  • 0.5 cup balsamic vinegar separate the ½ cup
  • 1 Tbsp balsamic vinegar the tablespoon of vinegar
Honey
  • 1 Tbsp honey separate in 1 tablespoon each
  • 1 Tbsp honey second tablespoon
Chicken
  • 6 pieces chicken tenders cut into chunks
  • 1 ¼ tsp salt
  • ½ tsp black pepper
  • 1 tsp lemon seasoning
Olive Oil
  • 2 Tbsp extra virgin olive oil
Vegetables
  • 1 small yellow onion diced
  • 2 Tbsp minced garlic
  • 4 C halved cherry tomatoes
  • ¼ tsp dried thyme
Cheese
  • 1 C part-skim mozzarella pearls quartered
  • ½ C fresh basil leaves chopped

Method
 

  1. Combine ½ cup of balsamic vinegar and 1 tablespoon of honey in a saucepan; simmer until thickened.
  2. Season chicken with salt, pepper, and lemon seasoning. Sear in olive oil until browned, then remove.
  3. Sauté onion and garlic in the same skillet, then add tomatoes, thyme, remaining vinegar, honey, salt, pepper, and lemon seasoning. Cook until tomatoes soften.
  4. Return chicken to skillet, top with mozzarella, cover, and cook for 2 minutes until cheese melts. Drizzle with balsamic vinegar and garnish with basil.

Notes

Use fresh basil for best flavor and serve immediately.
