- Combine ½ cup of balsamic vinegar and 1 tablespoon of honey in a saucepan; simmer until thickened.
- Season chicken with salt, pepper, and lemon seasoning. Sear in olive oil until browned, then remove.
- Sauté onion and garlic in the same skillet, then add tomatoes, thyme, remaining vinegar, honey, salt, pepper, and lemon seasoning. Cook until tomatoes soften.
- Return chicken to skillet, top with mozzarella, cover, and cook for 2 minutes until cheese melts. Drizzle with balsamic vinegar and garnish with basil.
Notes
Use fresh basil for best flavor and serve immediately.
