  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 0.5 cup beef broth
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Heat olive oil in skillet, cook ground beef until browned.
  2. Add onion and garlic, cook until softened.
  3. Add potatoes, salt, pepper, paprika, and oregano. Stir.
  4. Pour in broth, cover, reduce heat, cook 20-25 minutes.
  5. Sprinkle cheese, cover, cook 2-3 minutes until melted.
  6. Garnish with parsley before serving.

Notes

For a spicier dish, add a pinch of red pepper flakes along with the other seasonings.
