  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 0.5 cup beef broth
  • 1 tablespoon fresh parsley, chopped

Method
 

  1. Brown ground beef in olive oil.
  2. Add onion and garlic; cook until softened.
  3. Add potatoes, salt, pepper, paprika, and oregano.
  4. Pour in beef broth, cover, and simmer until potatoes are tender.
  5. Sprinkle with cheese, cover, and melt.
  6. Garnish with parsley.

Notes

For a spicier dish, add a pinch of red pepper flakes.
