Ingredients
  

dry ingredients
  • 1 cup gluten-free rolled oats
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
wet ingredients
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix dry ingredients; in another bowl, combine wet ingredients.
  3. Add egg to wet mixture, then combine with dry ingredients.
  4. Fold in chocolate chips and scoop dough onto baking sheet.
  5. Bake for 10-12 minutes; cool before serving.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg.
