  • 4 cups cooked chicken, shredded You can use rotisserie chicken to save time.
  • 2 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups cooked pasta e.g., penne or rotini
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • for garnish fresh basil or parsley Optional garnish.

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add chicken, garlic powder, Italian seasoning, salt, and pepper. Stir and heat for 5 minutes.
  3. In a bowl, combine pasta, marinara sauce, half of the Parmesan, and half of the mozzarella. Mix well.
  4. Add seasoned chicken to the pasta mixture and mix until evenly distributed.
  5. Pour the mixture into a greased 9x13-inch baking dish. Spread evenly.
  6. Top with the remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for 10 minutes or until cheese is bubbly and golden brown.
  9. Let it cool for a few minutes. Garnish with basil or parsley, if using.
  10. Serve warm and enjoy!

Notes

For a richer flavor, use a high-quality marinara sauce. You can also add vegetables like bell peppers or mushrooms to the casserole.
