Ingredients
  

Main
  • 1 can chickpeas, drained and rinsed
  • 0.25 cup vegan mayonnaise
  • 1 tbsp Dijon mustard
  • 0.5 cup celery, finely chopped
  • 0.25 cup red onion, finely chopped
  • to taste Salt and pepper
  • 4 slices whole grain bread
  • as needed Lettuce leaves

Method
 

  1. Mash chickpeas in a bowl until coarsely mashed.
  2. Mix in vegan mayonnaise and Dijon mustard.
  3. Add celery, red onion, salt, and pepper; mix well.
  4. Spread mixture onto bread slices and top with lettuce.
  5. Assemble sandwiches and serve immediately.

You can add more vegetables or spices for extra flavor.
