Method
- Rinse rice until water runs clear.
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until translucent, then add bell pepper and vegetables, cook 5 minutes.
- Add rice, stir to coat, then pour in broth and soy sauce. Season with salt and pepper.
- Bring to boil, reduce heat, cover, and simmer 15-20 minutes until rice is tender.
