Ingredients
  

Dry ingredients
  • 2 cups rice uncooked
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce
  • Salt and pepper to taste Salt and pepper seasoning
Vegetables and herbs
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper bell pepper, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
Broth and liquids
  • 2 cups vegetable broth

Method
 

  1. Rinse rice until water runs clear.
  2. Heat olive oil in a large pot over medium heat.
  3. Sauté onion and garlic until translucent, then add bell pepper and vegetables, cook 5 minutes.
  4. Add rice, stir to coat, then pour in broth and soy sauce. Season with salt and pepper.
  5. Bring to boil, reduce heat, cover, and simmer 15-20 minutes until rice is tender.

Notes

Feel free to garnish with fresh herbs for added flavor.
