Ingredients
  

Dry ingredients
  • 1 1/2 cups gluten-free flour blend preferably almond or rice flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
Wet ingredients
  • 3 ripe bananas mashed bananas preferably mashed ripe bananas
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
Cinnamon swirl
  • 2 tablespoons cinnamon
  • 2 tablespoons brown sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, coconut oil, maple syrup, and vanilla.
  3. Combine wet and dry ingredients until just mixed. In a small bowl, mix cinnamon and brown sugar for the swirl.
  4. Pour half of the batter into the pan, sprinkle with cinnamon sugar, then top with remaining batter. Swirl with a knife.
  5. Bake for 50 minutes or until a toothpick inserted comes out clean. Let cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
