Method
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix dry ingredients in a bowl. In another bowl, combine mashed bananas, coconut oil, maple syrup, and vanilla.
- Combine wet and dry ingredients until just mixed. In a small bowl, mix cinnamon and brown sugar for the swirl.
- Pour half of the batter into the pan, sprinkle with cinnamon sugar, then top with remaining batter. Swirl with a knife.
- Bake for 50 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
Notes
Use ripe bananas for best flavor and sweetness.
