Ingredients
  

Dough
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup almond flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup raspberry or apricot jam
  • powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and sugar until fluffy, then mix in vanilla, salt, and almond flour.
  3. Add flour gradually to form dough, chill for 30 minutes.
  4. Roll out dough, cut out shapes, and make a smaller cutout in half of the cookies.
  5. Bake for 10-12 minutes until lightly golden, then cool.
  6. Spread jam on solid cookies, top with cutouts, dust with powdered sugar, and serve.

Notes

Chill the dough well for easier handling and better cookies.
