Classic Meatloaf with Mashed Potatoes

Ingredients
  

Meatloaf
  • 1.5 lbs ground beef 80/20
  • 1 cup breadcrumbs plain or Italian seasoned
  • 0.5 cup whole milk
  • 1 large egg
  • 0.5 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 0.25 cup ketchup
Mashed Potatoes
  • 3 lbs Yukon Gold potatoes peeled and quartered
  • 0.5 cup milk for the potatoes
  • 4 tbsp unsalted butter for the potatoes
  • to taste Salt and pepper for the potatoes

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, and pepper.
  3. Shape the meatloaf and place in a baking dish.
  4. Spread ketchup over the top.
  5. Bake for 60 minutes.
  6. Boil potatoes until fork-tender (15-20 minutes).
  7. Drain the water from potatoes.
  8. Add milk and butter to potatoes. Salt and pepper to taste.
  9. Mash it all together.
  10. Let the meatloaf rest for a few minutes.
  11. Slice the meatloaf and serve with mashed potatoes.

Notes

For a richer flavor, add a tablespoon of Worcestershire sauce to the meatloaf mixture.
