  • 3/4 cup granulated sugar
  • 2 eggs eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh cranberries

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time.
  3. Mix in dry ingredients, then fold in cranberries. Pour into pan.
  4. Bake for 55-60 minutes. Cool before serving.

Notes

For a more intense cranberry flavor, fold in some dried cranberries before baking.
