  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (optional for heat)

  • 3 cups chicken broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 1 cup frozen corn
  • 1/2 cup sour cream
  • 4 ounces cream cheese, softened
  • 1/4 cup chopped fresh cilantro
  • 1 lime Juice of 1 lime
Optional toppings
  • to taste sliced jalapeños, avocado, shredded cheese, tortilla chips

Method
 

  1. Heat olive oil in a large pot, cook diced onion until translucent.
  2. Add garlic and cook for 1 minute, then add diced chicken with spices; cook until browned.
  3. Pour in chicken broth, add beans, chiles, and corn; simmer for 15-20 minutes.
  4. Stir in sour cream and cream cheese until smooth, then add cilantro and lime juice.
  5. Serve warm with optional toppings like jalapeños, avocado, cheese, or chips.

Notes

For extra heat, add more cayenne or serve with hot sauce.
