Crockpot Chipotle Shredded Beef

Tender and flavorful shredded beef cooked in a crockpot with chipotle peppers and spices. Perfect for tacos, burritos, or bowls!

Ingredients
  

Beef
  • 2.5 lbs boneless beef chuck roast
Spices
  • 1 Tbsp chipotle powder
  • 1 Tbsp paprika (or smoked paprika)
  • 0.5 Tbsp dried oregano
  • 0.5 Tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
Other
  • 1 medium white onion, sliced
  • 5 garlic cloves (left whole)
  • 1 cup beef broth
  • 0.25 cup orange juice (fresh juice is the best!)
  • 0.25 cup water
  • 2 Tbsp lime juice
  • 1 chipotle pepper in adobo, deseeded & chopped
  • 0.25 cup cilantro, chopped (leaves & stems)

Method
 

  1. Season the beef. Cut the beef into large pieces and toss with spices.
  2. Cook. Place onion, garlic, beef broth, orange juice, lime juice, water and chipotle pepper in the crockpot. Add beef and cilantro. Cover and cook on low for 6-8 hours.
  3. Shred and serve. Transfer beef and onions to a tray, reserving some juice. Shred the beef and serve.

Notes

Serve with your favorite toppings like salsa, guacamole, and sour cream.
