  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 cup cocktail sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon horseradish
  • 1 teaspoon hot sauce (optional)
  • for garnish Fresh parsley, chopped
  • for garnish Lemon wedges

Method
 

  1. Preheat oven to 400°F (200°C). Toss shrimp with olive oil, salt, and pepper on a baking sheet.
  2. Roast shrimp for 6-8 minutes until opaque and pink. Cool slightly.
  3. Mix cocktail sauce, lemon juice, horseradish, and hot sauce in a bowl.
  4. Arrange shrimp on a serving dish or glasses. Pour sauce over shrimp.
  5. Garnish with parsley, lemon wedges, and extra cocktail sauce. Serve chilled.
