Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup brown sugar, packed
  • 1/4 cup molasses
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Add-ins
  • 1/2 cup chopped fresh water peaches
  • 1/4 cup dairy-free chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix dry ingredients in a bowl; combine wet ingredients in another.
  3. Combine wet and dry, then fold in peaches and chocolate chips if using.
  4. Scoop dough onto baking sheet and bake for 10-12 minutes.
  5. Cool cookies on a wire rack before serving.
