Method
- Rinse rice until water runs clear.
- Heat olive oil in a large pot and sauté onion and garlic until translucent.
- Add bell pepper and mixed vegetables; cook for 5 minutes.
- Stir in rice, then add broth and soy sauce; season with salt and pepper.
- Bring to boil, reduce heat, cover, and simmer for 15-20 minutes until tender. Fluff and garnish with herbs.
