Method
- Preheat oven to 375°F (190°C).
- Pound chicken breasts to even thickness and prepare the cream cheese mixture by combining cream cheese, half the mozzarella, Parmesan, garlic powder, onion powder, Italian herbs, salt, pepper, and spinach.
- Cut pockets into chicken breasts and stuff with the cream cheese mixture.
- Heat olive oil in a skillet, sear chicken for 3-4 minutes per side until golden, then sprinkle remaining mozzarella on top.
- Transfer skillet to oven and bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
