Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup spinach (fresh or frozen, thawed and drained)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts to even thickness and prepare the cream cheese mixture by combining cream cheese, half the mozzarella, Parmesan, garlic powder, onion powder, Italian herbs, salt, pepper, and spinach.
  3. Cut pockets into chicken breasts and stuff with the cream cheese mixture.
  4. Heat olive oil in a skillet, sear chicken for 3-4 minutes per side until golden, then sprinkle remaining mozzarella on top.
  5. Transfer skillet to oven and bake for 25-30 minutes until internal temperature reaches 165°F (74°C).
