  • 8 large eggs
  • 0.5 cup mayonnaise
  • 0.25 cup chopped green onion
  • 1 teaspoon prepared yellow mustard
  • 0.25 teaspoon paprika
  • to taste salt and pepper

Method
 

  1. Place eggs in a saucepan, cover with water, bring to a boil, then simmer for 10 minutes. Cool and peel.
  2. Chop eggs, mix with mayonnaise, green onion, mustard, paprika, salt, and pepper.
  3. Refrigerate for at least an hour before serving.

Notes

For extra flavor, add a pinch of dill or paprika on top before serving.
