Method
- Brown ground beef, drain grease, add taco seasoning and water. Stir.
- Add rice, then water, then ground beef mixture to the slow cooker.
- Spread salsa over meat, then add corn and black beans.
- Top with cheese, cover, and cook on HIGH for 2.5-3 hours until rice is tender.
- Check for doneness starting at 2 hours.
- Spoon into bowls and add optional toppings.
Notes
For a spicier kick, add a pinch of cayenne pepper to the ground beef mixture.
