  • 1 lb ground beef
  • 1 packet low sodium taco seasoning plus water called for on packet
  • 1.5 cups white rice (long grain)
  • 1.5 cups water
  • 1 cup salsa
  • 0.5 can black beans (drained and rinsed)
  • 1 can southwest style corn (drained) (15 oz.)
  • 1.5 cups shredded Mexican blend cheese

Method
 

  1. Brown ground beef, drain grease, add taco seasoning and water. Stir.
  2. Add rice, then water, then ground beef mixture to the slow cooker.
  3. Spread salsa over meat, then add corn and black beans.
  4. Top with cheese, cover, and cook on HIGH for 2.5-3 hours until rice is tender.
  5. Check for doneness starting at 2 hours.
  6. Spoon into bowls and add optional toppings.

Notes

For a spicier kick, add a pinch of cayenne pepper to the ground beef mixture.
