Ingredients
  

Rice
  • 2 cups rice
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon soy sauce

Method
 

  1. Rinse rice until water runs clear.
  2. Heat olive oil in a large pot over medium heat.
  3. Add rice and toast for 2-3 minutes.
  4. Pour in broth, add salt, pepper, and soy sauce. Bring to boil.
  5. Reduce heat, cover, and simmer for 15 minutes. Add vegetables and cook 5-7 more minutes.

Notes

Use fresh or frozen vegetables for best flavor.
