Method
- Rinse rice until water runs clear.
- Heat olive oil in a large pot over medium heat.
- Add rice and toast for 2-3 minutes.
- Pour in broth, add salt, pepper, and soy sauce. Bring to boil.
- Reduce heat, cover, and simmer for 15 minutes. Add vegetables and cook 5-7 more minutes.
