Ingredients
  

Meat and Seasonings
  • 1 lb 95% lean ground beef
  • 1 packet reduced sodium taco seasoning 1.25 oz packet
Vegetables and Cheese
  • 1 medium-large head iceberg lettuce
  • 1 medium-large tomato (diced)
  • 4 oz 50% less fat sharp cheddar cheese (shredded) such as Cabot
Crunchy Toppings
  • 4 oz nacho cheese Doritos (broken into bite-sized pieces)
  • 1 cup light Catalina or French dressing e.g., Kraft Lite Catalina

Method
 

  1. Cook the ground beef in a skillet over medium heat, breaking it apart. Add taco seasoning and stir. Set aside.
  2. In a large bowl, combine lettuce, tomatoes, cheese, and cooked beef.
  3. Just before serving, add Doritos and dressing, then toss to coat.

Notes

For extra flavor, chill the salad before serving.
