  • 1 pound shredded, cooked chicken about 3 cups; rotisserie recommended
  • 1 large celery stalk diced
  • 0.5 medium red onion or scallions finely chopped
  • 0.5 cup seedless red grapes quartered (optional)
  • 4 sprigs fresh dill chopped (about 1/4 cup)
  • 0.75 cup mayonnaise or 1/2 cup plain Greek yogurt plus 1/4 cup mayonnaise
  • 1.5 teaspoons Dijon mustard
  • 0.5 teaspoon celery seeds optional
  • 1 tablespoon lemon juice from half a lemon
  • to taste N/A Kosher salt
  • to taste N/A Freshly ground black pepper

Method
 

  1. Combine chicken, celery, onion or scallions, grapes, and dill in a large bowl.
  2. Add mayonnaise, Greek yogurt, Dijon mustard, celery seeds, and lemon juice. Stir until coated.
  3. Season with salt and black pepper. Adjust to taste.
  4. Chill for at least 30 minutes before serving.
  5. Serve on bread, croissants, lettuce, or over a salad.

Notes

For extra flavor, add chopped nuts or a dash of hot sauce.
