  • 8 ounces cream cheese (a block of Philly) (softened)
  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste) Salt & pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh chopped parsley (optional, to taste) parsley (optional)

Method
 

  1. Microwave the cream cheese until very soft, then cut into pieces and set aside.
  2. Slice chicken breasts in half lengthwise, season with garlic powder, salt, and pepper.
  3. Melt butter and oil in a skillet, cook chicken until golden and cooked through, then transfer to a plate.
  4. Sauté onions in the same skillet until softened, then add garlic and cook briefly.
  5. Add chicken broth, cream cheese, Italian seasoning, and red pepper flakes; stir until smooth.
  6. Return chicken to skillet, warm through, adjust seasoning, sprinkle parsley if desired, and serve.

Notes

For a richer flavor, use fresh parsley and adjust seasoning to taste.
