Ingredients

  • 1 1/2 cups gluten-free flour
  • 1 teaspoon baking soda
Wet ingredients
  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil
  • 2 eggs eggs

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, combine dry ingredients: gluten-free flour and baking soda.
  3. In another bowl, mash bananas and mix with honey, olive oil, and eggs.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50 minutes.
