Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
Wet ingredients
  • 3 ripe bananas mashed bananas mashed well
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 eggs large eggs
Optional add-ins
  • 1/2 cup chopped nuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix dry ingredients: flour and baking soda.
  3. In another bowl, mash bananas and mix with sugar, oil, and eggs.
  4. Combine wet and dry ingredients until just mixed. Fold in nuts or chocolate chips if desired.
  5. Pour batter into prepared loaf pan and bake for 50 minutes or until a toothpick comes out clean.

Notes

Use very ripe bananas for best flavor and moisture.
