Ingredients
  

Protein
  • 2 lbs boneless, skinless chicken breasts or about 3 cups shredded leftover chicken
  • 1 large white onion diced
  • 3 cloves garlic minced
  • 2 cans white beans 15 oz each, drained and rinsed
  • 1 can diced green chilies 4 oz
  • 2 cups low sodium chicken broth
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
Optional Add-ins
  • 1/2 cup corn kernels 15 oz can, drained
  • 1/2 cup plain Greek yogurt for a creamy finish

Method
 

  1. Place chicken in slow cooker, season with salt and pepper, then add onion and garlic on top.
  2. Add beans, green chilies, broth, cumin, chili powder, oregano, and optional corn. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  3. Remove chicken, shred with forks, then stir back into chili. If desired, mix in Greek yogurt before serving.
