Method
- Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken, coat well, cover, and refrigerate for 30 minutes to 4 hours.
- Soak wooden skewers in water for 30 minutes (skip if using metal skewers).
- Preheat grill to medium-high heat.
- Thread chicken, bell peppers, and red onion onto skewers.
- Grill for 10-12 minutes, turning occasionally, until chicken is cooked (165°F/74°C).
- Remove from grill and let rest for a few minutes.
- Serve hot and enjoy!
