Chicken Skewers
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 red onion cut into 1-inch pieces
  • Wooden or metal skewers

Method
 

  1. Whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
  2. Add chicken, coat well, cover, and refrigerate for 30 minutes to 4 hours.
  3. Soak wooden skewers in water for 30 minutes (skip if using metal skewers).
  4. Preheat grill to medium-high heat.
  5. Thread chicken, bell peppers, and red onion onto skewers.
  6. Grill for 10-12 minutes, turning occasionally, until chicken is cooked (165°F/74°C).
  7. Remove from grill and let rest for a few minutes.
  8. Serve hot and enjoy!

Notes

For best results, marinate the chicken for at least 2 hours to allow the flavors to fully penetrate.
