Ingredients
  

Fruits
  • 2 to 3 pieces ripe bananas the riper, the better!
Dry ingredients
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
Wet ingredients
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
Leavening & seasoning
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
Add-ins (optional)
  • ½ cup chopped nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and prepare muffin tin.
  2. Mash bananas until smooth, then mix in sugar and melted butter.
  3. Add eggs and vanilla, then fold in dry ingredients until just combined.
  4. Gently fold in nuts or chocolate chips if using, then fill muffin cups ¾ full.
  5. Bake for 18-22 minutes until golden and a toothpick comes out clean. Cool before serving.

Notes

For extra flavor, add a pinch of cinnamon or fold in chocolate chips.
