  • 1 roll refrigerated sugar cookie dough (16.5 ounces)

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
Topping
  • Assorted fresh fruit (strawberries, blueberries, kiwi, mandarin oranges, etc.)
  • 1/4 cup fruit preserves (apricot or strawberry)
  • 2 tablespoons water

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Press cookie dough into a greased 12-inch pizza pan.
  3. Bake for 12-15 minutes, or until golden brown. Let cool completely.
  4. In a medium bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  5. Spread cream cheese mixture evenly over cooled cookie crust.
  6. Arrange fresh fruit attractively over the cream cheese layer.
  7. In a small saucepan, heat fruit preserves and water over low heat, stirring until smooth. Let cool slightly.
  8. Brush the glaze over the fruit to give it a shine and help prevent browning.
