Ingredients
  

Crust
  • 1.5 cups all-purpose flour spooned & leveled
  • 1.5 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract
Frosting
  • 8 ounces full-fat brick cream cheese softened
  • 3 Tablespoons unsalted butter softened
  • 1.25 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
Topping
  • 3 cups assorted sliced fresh fruit about 400g

Method
 

  1. Whisk flour, cornstarch, baking powder, and salt.
  2. Cream butter and sugar, then beat in egg and vanilla. Add dry ingredients and chill for 20 minutes.
  3. Preheat oven to 350°F (177°C). Press dough onto pizza pan and bake for 17–19 minutes. Cool completely.
  4. Beat cream cheese and butter, then add confectioners’ sugar and vanilla. Spread on crust and decorate with fruit.
  5. Cut into slices and serve. Leftovers keep well in the refrigerator for up to 3 days.
