Ingredients
  

Crust
  • 1 roll refrigerated sugar cookie dough (16.5 ounces)
Cream Cheese Frosting
  • 8 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
Fruit Topping
  • Assorted fresh fruit (strawberries, blueberries, kiwi, mandarin oranges, raspberries, etc.)
  • Apricot jam or glaze optional

Method
 

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Press cookie dough onto a greased 12-inch pizza pan.
  3. Bake for 12-15 minutes, or until golden brown. Cool completely.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Spread cream cheese mixture over cooled cookie crust.
  6. Arrange assorted fruit attractively over the cream cheese.
  7. Brush fruit with apricot jam or glaze (optional).
  8. Refrigerate for at least 30 minutes before serving.
