Ingredients
  

Crust
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Frosting
  • 8 oz cream cheese
  • 1/4 cup unsalted butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
Topping
  • 2 cups assorted fresh fruits
  • 1 tablespoon apricot jam optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a 12-inch pizza pan with parchment paper.
  2. Cream butter and sugar until fluffy. Add egg and vanilla. Mix in flour, baking powder, and salt until a soft dough forms. Spread on pan and bake for 12-15 minutes until golden. Cool completely.
  3. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until creamy.
  4. Spread frosting over the cooled crust. Arrange fruits in a design.
  5. Heat apricot jam with a teaspoon of water and brush over fruits (optional). Refrigerate for 30 minutes to set.
  6. Slice and serve chilled.

Notes

Make sure the crust is completely cool before adding the frosting to prevent it from melting.
