  • 1 lb Chicken thighs
  • 1 lb Baby potatoes
  • 4 cloves Garlic minced
  • 4 tbsp Butter
  • 1 cup Chicken broth
  • 2 tbsp Parsley fresh, chopped
  • to taste Salt
  • to taste Pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with salt and pepper.
  3. Melt butter in a skillet, add garlic, and sauté for 1 minute.
  4. Add chicken thighs and brown on both sides for 4-5 minutes.
  5. Toss in the baby potatoes, mixing to coat them in the butter.
  6. Pour in the chicken broth.
  7. Transfer the skillet to the oven and roast for 30-35 minutes.
  8. Sprinkle with fresh parsley and serve.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
