  • 1 lb Chicken thighs
  • 1 lb Baby potatoes
  • 4 cloves Garlic minced
  • 4 tbsp Butter
  • 1 cup Chicken broth
  • 2 tbsp Parsley fresh, chopped
  • to taste Salt
  • to taste Pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Season chicken with salt and pepper.
  3. Melt butter in a skillet, add garlic, and sauté for 1 minute.
  4. Brown chicken in the skillet for 4-5 minutes per side.
  5. Toss in potatoes, coating them in butter.
  6. Pour in chicken broth, partially submerging potatoes.
  7. Transfer to oven and roast for 30-35 minutes.
  8. Sprinkle with parsley and serve.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
