Method
- Preheat oven to 400°F (200°C).
- Season chicken with salt and pepper.
- Melt butter in a skillet, add garlic, and sauté for 1 minute.
- Brown chicken in the skillet for 4-5 minutes per side.
- Toss in potatoes, coating them in butter.
- Pour in chicken broth, partially submerging potatoes.
- Transfer to oven and roast for 30-35 minutes.
- Sprinkle with parsley and serve.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
