  • 1 lb Chicken thighs
  • 1 lb Baby potatoes
  • 4 cloves Garlic
  • 4 tbsp Butter
  • 1 cup Chicken broth
  • 2 tbsp Parsley fresh
  • to taste Salt
  • to taste Pepper

Method
 

  1. Preheat your oven to 400°F (200°C) for even cooking.
  2. Season the chicken thighs with salt and pepper. Add any additional seasonings as desired.
  3. In a skillet, melt butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the chicken thighs to the skillet and brown on both sides for 4-5 minutes.
  5. Toss in the baby potatoes, gently mixing to coat them in the butter.
  6. Pour in the chicken broth, making sure the potatoes are partially submerged.
  7. Transfer the skillet to the oven and roast for 30-35 minutes, until the chicken is cooked through and the potatoes are fork-tender.
  8. Once cooked, sprinkle with fresh parsley and serve.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
