Method
- Preheat your oven to 400°F (200°C) for even cooking.
- Season the chicken thighs with salt and pepper. Add any additional seasonings as desired.
- In a skillet, melt butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chicken thighs to the skillet and brown on both sides for 4-5 minutes.
- Toss in the baby potatoes, gently mixing to coat them in the butter.
- Pour in the chicken broth, making sure the potatoes are partially submerged.
- Transfer the skillet to the oven and roast for 30-35 minutes, until the chicken is cooked through and the potatoes are fork-tender.
- Once cooked, sprinkle with fresh parsley and serve.
Notes
For extra flavor, add a squeeze of lemon juice before serving.
