Ingredients
  

dry ingredients
  • 2 cups almond flour
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
wet ingredients
  • 1/2 cup unsalted butter, melted
  • 1 large egg egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix dry ingredients in a bowl.
  3. Combine wet ingredients in another bowl.
  4. Mix wet into dry to form dough, then fold in chocolate chips.
  5. Scoop onto baking sheet, flatten slightly, and bake for 12-15 minutes.

For best results, chill the dough before baking.
