Ingredients
  

Dough
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
Decorations
  • royal icing or decorations for decorating optional

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. Mix dry ingredients in a bowl. Cream butter and sugar, add molasses, egg, vanilla. Combine with dry ingredients to form dough.
  3. Roll out dough, cut shapes, and place on sheets. Bake for 8-10 minutes until edges are firm.
  4. Cool cookies on wire rack. Decorate as desired and serve.

Notes

Chill dough if too sticky, and use cookie cutters for fun shapes.
